Recipe: Southwestern Egg Rolls

I cook pretty much all day at work but I always feel like cooking for Seth when I see him. I know, I’m a bit crazy. The other evening I made these delicious southwestern style egg rolls. The original recipe is from Cake & Allie and you’ve most likely seen photos from the post all over Pinterest. I obviously did haha. I changed up the recipe a little bit to create a crunchy and filling yet light dinner for Seth and my parents. Serve them with a dollop of sour cream and you’ve got a yummy dinner! Oh, I bet rice would be delicious inside or on the side (I just thought of that now, thus the random insert).

I hope you enjoy these little guys! They are some yummy and the crunchy outer shell makes them just like a taco but better! Enjoy!
